I think the biggest unlock for me was browning the meat really well first

Anthony bourdains beef bourgoignon has good instructions for that

After that you clean up the pan with celery, carrots, onions and it has the best flavor!!!

Never tried that ~ I'll dig up the recipe on the internet to try later 👌
