checked twitch profile and it says electroencephalogram (EEG, recording brain activity) and eye tracking so if this was real she was looking at or thinking jump, roll, attack, etc if i'm not mistaken

It’s real. She beat Melania on the first one

It's real, but also still very basic. Basically mapping EEG patterns to specific game inputs. She's not thinking "dodge this" but rather something basic like push/pull/spin, which she has then mapped to the correct dodge input. 
Pretty cool to watch here set everything up and try out different setups.

controlling a dot with eeg is pretty straight forward but this would take a lot of training
