Read somewhere that you cant associate all the coins/chains with DNS names. Is that true? If so is that only currently or forever be like that?

that is currently true for the "special resolver" mentioned here, but there is no limit at the protocol level

<ens-resolver-address> can be a resolver that supports any coins/chains and such
