Will I be able to keep using Apple Intelligence while living in the EU If I have another registered Apple Store (which I already do), will it still work?

Yes, of course. Some features might vary by region, but your services will generally remain accessible. For now, if you have your deviceā€™s configuration to use Siri in English, you have access to all of its power. If not, some things may not be available at first.

I am. And right now, the specifics of how the DMA will impact Apple Intelligence services are not fully clear yet. Itā€™s possible that certain features or integrations might be adjusted to comply with the new regulations, but overall access to services should remain largely unaffected.

Awesome, mon ami. Glad to be of any help. Over here (Brazil) I natively speak Portuguese, but I always use everything Apple in English, cause itā€™s definitely the best way to experience Apple products, since everything comes out first in English and depending on the product, ends up never getting too far from the US, specially not as far as Brazil. For example, I have an Apple HomePod and ever since launch, they never brought a Portuguese speaking version of Siri to it.
