Trying some andouillette for the first time. 

I like it.

First time I tried this I order some in Paris and was quite surprised as it’s not like Cajun andouille we have here in states at all. Delicious though for sure!

They just call it andouille and it’s a spicy smoked sausage kind of like kielbasa. Salty spicy savoury but none of the tripe funk. It’s an ingredient in jambalaya also.
