Turns out my data didn't actually include prices or market caps but here's the longest token name and symbols on CoinGecko.

Longest name is "Fortunafi Tokenized Short-term U.S. Treasury Bills for Non US Residents" and the longest symbol is "hixokdkekjcjdksicndnaiaihsbznnxnxnduje"
