Salt and Pepper Tofu

Mind youuu, this was SILKEN tofu!!! How were they able to coat it in batter and fry it without falling apart? 🤔

Recipe I made the ragout with tofu instead of meat 
For the rest normal procedure
 Browned carrot onion with a little oil and put tomato puree and tofu instead of meat 
Cooked ragout for about half an hour
Then diced mozzarella smoked provolone cheese and grated parmesan cheese
Made the béchamel sauce with milk butter flour and a pinch of salt
 Started making up the layers : 
First a layer of béchamel sauce on the bottom 
Then in order : 
Lasagna 
Béchamel sauce 
Vegetarian ragout
Mozzarella provolone cheese 
Grana cheese on top 
Composed each layer this way
