Has anyone looked into the nbetween Latin culture and cooperatives? I feel like there must also be a strong catholic element involved?

There was definitely significant influence from left-wing christian movements (specially strong in Basque Country and Catalonia). In fact, Mondragon itself was founded by a Basque priest. Another factor could be the progressive and liberal nationalism of the Basque Country and Catalan countries, which have consistently looked for ways to counterbalance Spanish centralism. And that includes decentralized bottom-up economies (to see the extent of this, Catalonia had a cooperative movement much before than Spain as a state and Catalonia was member of international cooperative organisms around 30 years before Spain, even if catalan cooperativists tried so hard to build a cooperative movement in Spain)) On top of that, the strong historical legacy of anarchism, liberal republicanism, and socialism has deeply shaped our collective mindset. I donโ€™t know about Italy, but iirc they also had strong workers-aligned christian organizations and a workers autonomous movement really influenced by cooperativism.
