Is neither an option? Showing existing project is lower barrier for candidates, but I've found it very hit and miss when hiring since people come with all kinds of random projects. Difficult to compare candidates objectively

Yes I give that option and then I assess any topics I think are important but not demonstrated by the code they share. I'm still working on the best way to do this; I like the idea that's come up here of having the candidate build on top of their own code.
