Since you are unable to connect the VisionPro to a Mac and create two screens, can you connect to two Macs?

Nope only one screen for now, and they've yet to take out all the kinks since it lags sometimes

Bummer. Still sounds pretty fun. I wonder if that is something they can add with a software update. Or do you think the VP needs more powerful hardware?

Yes, it already shipped with an outdated chipset (comes with the M2 when the M3 is current cycle).
