Season shrimp with salt and pepper. In a large skillet, melt butter over medium heat. Add minced garlic and cook until fragrant, about 1 minute. Add shrimp to the skillet in a single layer. Cook for 2-3 minutes per side, or until shrimp turns pink and opaque. Stir in lemon zest, lemon juice, and chopped parsley. Cook for another minute, stirring to coat shrimp evenly with sauce. Remove from heat and serve immediately, garnished with additional chopped parsley if desired.
