The only way around Moloch is to conquer our sacrificial nature.

Ideas on how we do that at the global scale?

Moloch scales organically because it's driven by self-interest. The only way out is to be a monk and not play. An option is to play differently, but that's local. Globally, we'd need to set up completely new games, but the challenge then is adoption: what would drive people to play a game that seems to make them lose?

sounds like you're with me in worrying that we won't be able to figure out our way out of Moloch

It's a rocky boat we're in on but I don't worry that much. All functional societies are built on similar dynamics and we're always trying to get around them with more or less success. You might find some value in reading Girard if you haven't yet.

Start with "Things Hidden Since The Foundation of the World", it's a long-form interview so it's easier to digest. I might do a breakdown of the main ideas here once I find an apt channel. As you read it, keep in mind that Moloch is a minion/instance of what Girard calls Satan.
