Simplemind, if you only need a single-player experience - it has the best keyboard-driven mapping ux of any tool I’ve tried. 

tldraw if you need a web experience you can easily share

If you need to collab with other people, figjam is fine, especially if you already pay for Figma

I like simplemind because I can keep hands on the keyboard, it makes mapping as fluid as typing prose, it’s good for staying in flow, the app itself is a little kludgy though
