How about this: 1. Generate the document hash. 2. Mint an NFT that has the document hash in its properties. It can also link to the document (if it's ok to be public). 3. Attach a link to the NFT to the original PDF. What you get: signature + on-chain proof of the date and time. Works with any file type.
