I typically buy the full rib roast from Costco and trim it myself which means – a bunch of excess fat that can be rendered down into tallow (use a Dutch oven, takes time but lasts a while, be patient) – I get to cut my steaks into whatever thickness I want (usually 1.5-2” for me) – I can also reserve some of it as a roast to make a prime rib (I usually do 7-10 lbs) and it’s half the price of cut ribeyes
