what are some good recipes that use celery? 

love to eat it but mostly use it in mirepoix or tuna salad

I recommend trying the celery potato soup ( ˶ˆᗜˆ˵ )
1.Cut the celery lengthwise and slice it thinly, then julienne the onion.
2.Dice the potatoes into 1cm cubes and mince the garlic.
3.Cook the potatoes with 1 cup of water over medium heat until tender, then set them aside.
4.In a pot, heat olive oil and sauté the celery, garlic, and onion.
5.Add salt, pour in 1 cup of water, and bring it to a boil.
6.Add the cooked potatoes and mash them well.
7.Once the potatoes are mashed, add chicken stock and cook for another 5-10 minutes.
8.Season with pepper and turn off the heat.

You can use the celery leaves as well, and they add great flavor. It's one of my favorite recipes!
