I've heard of breakfast burritos but never breakfast tacos. What do these involve? Is it a local thing?

it’s definitely local to Texas and especially Austin…we’re known for it! my favorite is a bacon egg and cheese on a freshly made tortilla, but bbq joints also make them with brisket and what have you
