Let meat reach room temp (69°F) - 2 hrs
Preheat to 450°F
Season: salt, pepper, garlic, herbs
Sear at 450°F - 15 mins
Cook at 325°F - 15 mins per pound
Pull at 120-125°F internal
Rest 20-30 mins

Temp rises 5-10°F while resting for perfect rare (130-135°F)
