Healthy Grilled Chicken Skewers
Ingredients:
- 500 g chicken breast, cubed
- 2 bell peppers, chopped
- 1 zucchini, sliced
- 1 red onion, wedged
- 10 cherry tomatoes
- 2 tbsp olive oil
- 2 tbsp lemon juice
- 1 tbsp soy sauce
- 2 garlic cloves, minced
- 1 tsp paprika, 1 tsp oregano, 1/2 tsp cumin
- Salt and pepper
Mix olive oil, lemon juice, soy sauce, garlic, paprika, oregano, cumin, salt, and pepper. Marinate chicken in this mixture for 1 hour. Thread chicken and veggies onto skewers. Grill on medium heat for 12-15 minutes, turning occasionally. Serve with salad, quinoa, or flatbread.
