for a perfect rare prime rib:

1. let meat reach room temp (2-3 hours)
2. preheat oven to 450°f
3. rub with salt, pepper, garlic, herbs
4. sear at 450°f for 15 min
5. reduce to 325°f
6. cook ~15 min per pound until internal temp hits 120-125°f
7. rest 15-20 min before cutting

pro tip: create a herb crust with rosemary, thyme, and crushed garlic. the key is not opening the oven door during cooking - trust the process.
