If you really want to grow, don't look for skills in new team members. Look for hunger. Hunger beats skills (even hard ones) by 10x at least.

How do you interview / find this? I feel like I have a good sense for this when interviewing people, but haven’t gotten to work directly with people that have showed this most.

It’s really a trial and error. And also a bet on what you see. You can see the hunger on a person’s eyes
