Mixed salad leaves, extra baby spinach, plum tomatoes, cucumber, red beans, avocado, new potatoes and smoked mackerel (non-vegan). Dressing: Tahini mixed "fortissimo" with lemon juice and water For a happy microbiome. Protein rich. Vitamin rich. Colour rich. How do I optimise this?
