One of my favorite ramens : Taiyo Tomato Ramen. The soup base is the chicken version of tonkotsu , and the concentrated umami from the tomatoes explodes in your mouth. Naturally, it goes great with cheese. It's a unique and interesting flavor that's neither fully Japanese nor Western.
