striped bass from new brunswick, poached in mussel stock, puffed wild rice, sake lees, amber turnip and marinated napa cabbage (top 3 for sure)

slow grilled east coast halibut, sea urchin beurre monte, elderflower capers, honey glaze roasted butternut squash and mint (basically tasted like a plate of butter in a good way)

roasted pork from linton pasture pork, was presented earlier in the meal so they could tell us what a soft life the pig lived and what the pig ate (a little silly that someone's job is pork parader but he seemed happy)

celeriac with a smoked egg emulsion, wild acadian sturgeon caviar, grilled pork, ginger, toasted hemp seed and blackened honey (this is where threads cut me off)

Rice tartlet with rice pudding and quince (least favorite) apple mille feuille with beet tuile, carmelized apples, dried rose curd and lemon verbana chantilly (good, the girl presenting it seemed very uncomfortable though)
