A helpful tip for organizing your vaults that I have found is to open the corresponding folder source on your desktop. There you will be able to organize and move your different notes and folders easier than doing it directly in Obsidian.

Why have any folders aside from required folders e.g. templates, attachments, Readwise, etc.? What purpose does this serve when it is always faster to simply search for a note or specific text?

What do you mean? Each folder in Obsidian has a local source with all of the text files. For bulk organization it's faster. When I create a bunch of notes and want to move them, I can select in the source folder rather than one by one in Obsidian.

Why do you care about the folder structure of your vault? Within a single vault, are you sifting through folders to find notes on a routine basis?
