Apollo and Pop-up are doing the good work of agitating people about what a New York bagel should be. 

NY bagels should be the best, simple as that, so challenging the Meta should be welcomed.

Kossars is a great shop run by a passionate team. Same owners Pick-A-Bagel, though they intentionally run them differently.
