Terms of Use, Privacy Policy, and Acceptable Use Policy...do these need to be separate, legally? Can't I just combine them in human language?

Acceptable Use Policy is usually a part of Terms of Use (ToU). Many countries require Privacy Policy (PP) to be a separate document, so yes, it is better to keep ToU and PP separate. As to “human language” — absolutely, but lawyers don’t like it. You can add context boxes, like Webflow does in their ToU.
