Why does rust-analyzer sometimes just not work? 


As in, its list of problems are not the same as any version of ‘cargo check’

Already tried updating, restarting server, etc

rust analyzer is like a toddler: responds if he wants, sometimes works, sometimes falls asleep

Throw it away, it's more comfortable to use the command line.
