I'm going to try cooking some (golden) beet greens with dinner tonight...!

Already roasted the beets earlier today, and the greens are very fresh, so I don't want to waste them

The beet greens are pretty gritty, so I've rinsed, soaked and drained them several times

The greens are very bitter, even after sauteing, so I went with spinach instead 🙃
