🥯 Basic bagel dough: 250 grams of high-gluten flour, 140 grams of ice water, 3 grams of salt, and 9 grams of fresh yeast.
Knead the dough until it forms a rough texture, let it relax for 20 minutes, shape it, wrap in the filling, and let it rise until it's 1.5 times its original size.
Boil water (now I just boil plain water directly, haha).
