Where are we minting if we want forever open editions in a collection?

I just want to make a collection that I can keep adding new mints to, and they stay open forever or a time I set.

could also fork mint protocol to allow for a customizable end time per mint

I haven’t minted for a bit to be certain, but I do know that you can’t just create an open mint cos of the new auto convert to erc20 thing.
I want to make a collection for the nouner charity car with open editions that people can collect ongoing.
