What are some of your favourite materials for composition? I'm a big fan of spread triads. The space gives a real beauty to the sound and playing through I can immediately hear elements of Bach's cello suites.

You can replace E with Eb to get C Melodic Minor and then replace A with Ab to get C Harmonic Minor. If you're interested in this check out Mick Goodrick's incredible Almanac of Voice Leading.
