I didn’t have enough gas to transact and sell my wheat. How do the onchain transactions work here? Is it through the custody address?

When you do an action like selling your cargo, the game server signs a message saying you can mint some tokens. Then you submit a tx that passes that message to the contract, and if the signature checks out you mint the Coins

Sorry, when I say custody address, I meant to say verified address.

It's just whichever address executes the function. The message that the server makes basically says "whoever submits this message to the blockchain, as long as it's before a certain time, give them this many coins". Then the game server just watches to see if the tx goes through before the time limit
