Most benefits of fermented foods come from the byproducts of the bacteria (short-chain fatty acids), which in turn support your gut and also reinforce the healthy bacteria in your gut, there are some probiotics which survive stomach acid and taking it on an empty stomach also helps (usually 30 minutes before eating so that your stomach is less acid and so that the bacteria have something to feed on later). (I am helping you create a healthy brain-gut axis so I don’t even need to ask you how you’re doing as your gut bacteria are producing seratonin)
