Lots to harvest after being away for the long weekend- eggplant, tomatoes, zucchini, string beans, bell peppers and jalapenos 

With the shorter days and cooler nights, it looks like cucumbers are done. 

Will soon try to re-seed some of the early spring crops that like cooler temps- arugula and radish

Moving this over from /gardening  to /food to share in-progress pics of what I’m cooking, starting with the before pic of the eggplant. 

Diced and tossed with salt and other spices and olive oil and into a 375 degree oven.

Zucchini went into the oven next- same preparation as the eggplant

The tomatoes roasted along with garlic - once it came out of the oven I added feta and goat cheese (bc that’s what I had laying around) and fresh basil 

These are all Lego pieces so far to what will eventually go over some pasta

Final product:

Roasted eggplant, zucchini and tomato with feta and goat cheese, served over pasta 

From harvest to stomach in under 2 hours

Taking a break to run a kid carpool so to be continued…

This was an entire journey! It all looks so delicious, and amazing that you grew it yourself. I've never seen eggplant with white skin, and I'm curious if it has a different flavor from the typical purple ones.
