wowow I found a store-bought yogurt that has a 24-hour fermentation! Super probiotic.  

I would guess most yogurt ferments for just 4-6 hours.  I used to make a homemade 24-hour yogurt for my son who was on a special diet for a while.  Very cool to see this.
