Which is easier to maintain, cheaper, and more stable: deploying a continuously running service on a self-hosted server or launching an on-demand service in the cloud?

What kind of services do you usually deploy on the cloud? Serverless or continuously running services?

I don't like serverless either because it's not as flexible and convenient in terms of coding, which cannot bring a smooth coding experience 🤣.

all continuously running services; i don’t like serverless b/c i can’t set up local dev environment 

we do use hasura cloud which manages our graphQL API between clients and DB

everything else we deploy via AWS ECS
