it's easier to get followers for a channel than for an account

Part of me thinks this is due to there being a public-facing number associated with how many users you follow but not how many channels

Ah yeah agreed, was thinking more in the context of brand accounts vs. channels

easier to think "yeah i want to keep tabs on this topic" vs follow a person i've never heard of

Yeah! There tends to be some status play with following vs. follower counts that affects how generously people tap the follow button.

Not sure, I follow way more accounts than channels 

I think focus wins. If a person posted only about a specific topic that was super relevant to me then I’d definitely follow. Account based content is maybe 10-30% relevant for me because people post about many different things and channel content is 40-60% relevant
