Learning to preheat the pan helped me a ton with this too (applies to stainless pans as well)

For sure, that would have been my next suggesetion. Gas and electric burners can heat unevenly - induction or oven is the way to go. Also an infrared thermometer to keep track of pan temperature has made cast iron/carbon steel a lot easier, and definitely made me a better cook https://a.co/d/1XLslln

I watched a chef friend cook an incredible meal on the shittiest electric stove/oven in his tiny NYC apartment. Made me really appreciate technique and taking your time in cooking.
