Made sooji halwa for the first time. This was incredibly easy compared to the other desserts I’ve been learning. It’s basically upma made with sugar syrup instead of water. Paired really well with a bit of pistachio icecream.

Roast 1 cup sooji (fine semolina) with some cashews in 2/3 cup ghee over low heat in heavy pan. Meanwhile heat 2.5 cups water with 0.75-1 cup sugar in another pot. Stir both for 5-6 minutes. Add some raisins and 1/2 tsp cardamom powder to sooji towards end. Add syrup to sooji as it boils, stir to desired consistency.
