OK does anyone have any idea why conventional "breakfast" food seems to so often come with absolutely no vegetables?

Historically I’d guess prep time. Grab a bite of easily prepared carbs and protein and go. Properly veg heavy foods also take longer to eat and are bad for a rush. I make egg or tofu veg skillets sometimes and it takes 2x longer to make and 2x longer to eat that plain eggs. So only for lazy mornings.

Would agree. Carbs and proteins are the quickest way to kill hunger which is probably what you want in the morning.
