Bravo, guanciale must be usedπ If you really wanna make it as authentic as the Romans do, instead of parmigiano you need to use βpecorinoβ which is kinda the same thing but is made out of sheep milkπ But still, dont worry, you did it better than a lots of italians doπ i can see it

Itβs the only way π«‘ Yeah thereβs no good pecorino in the supermarket itβs in plastic sealed kind of packaging so I go with one thatβs similar but freshly cut
