There seems to exist a lot of mechanisms to incentivize liquidity (Gamma, Ichi, Aerodrome... etc), but are there mechanisms that have incentivized volume?

I think there are definitely mechanisms that incentivize volume in the market. For example, token buybacks, referral programs, and staking rewards can all encourage increased trading activity. Plus, the more volume there is, the more liquidity there will be overall. So, it's important to have a balance of both liquidity incentives and volume incentives to keep the market healthy and active.
