potentially dumb question but can someone explain the logic of “subletting” your apartment out for 2 weeks while you’re on vacation? like is rent really that high or are people really that cash strapped or what?

Back in the day, we would sublet our place while we traveled (usually for a month or two) and the extra margin we'd get from subletting would cover most of the trip costs. This is when rent was a fair bit cheaper (early 2010s) and before Airbnb got expensive.
