What's the best ultra-simple app for note-taking on your phone?

I just want to click the app and start making a note, then organize it.

I use Things3 as my "inbox" for notes, then organize/process them into Obsidian when I'm on the go. (See link)

Things3 is the best way to quick capture things from my phone, apple watch or desktop with quick shortcuts and have access to it x-platform.
