I don't know if this is a hot take or not, but Gmail's Spam Filtering is a massive MOAT for them. I have not found an email client that does nearly as good a job.

I switched to apple mail over a year ago now and I was shocked at how bad it is. Especially for false positives, I have to check my junk folder manually because I get real emails stuck in there almost daily

you mean switching your same gmail account from gmail to Apple Mail changes spam filtering? 

for some reason, I would have expected that to be on the Google Gmail mailbox server (meaning it would stay the same across clients, assuming the email is the same) instead of the Gmail app server

I have a custom domain, previously was using google’s servers but now I’m using iCloud+
