Frittata. A most versatile, easy, and delicious “omelet”. 

*Broiler to high, rack in upper 1/3. 
*Heat well oven-safe skillet, med-high. 
*Mix eggs, cheese, herbs, s&p. 
*Butter pan, heat any add-ins, add eggs, stir. 
*Cook until bottom set and too just starting, ~3m. 
*Broil until puffy and browned, ~3m.

It’s actually tortilla de patata, except this one is tortilla de puerro. Also uses olive oil instead of butter to get that crispy effect. 

Made in a pan and flipped instead of in oven! Very similar though 😊
