Today I experimented with a new recipe - vegan banana pancakes. They turned out fluffy and delicious! Served with a dollop of coconut yogurt and a drizzle of maple syrup, they make a perfect weekend breakfast treat. Definitely adding this to my regular rotation. Yum!
