I only use salt and pepper rub for tri tip now

Used a pellet smoker, believe it or not! I’ve found the key is low and slow to 125 and the take them out and let them rest for 10-15 mins. Then crank the grill up to 500 and let it catch a flame and then throw them back in and reverse seer for 3-4 mins on each side. Pull at 130-135 max
