I have been saying this for years, Tokyo is the place to have the best pizza! They closed the old shop and transferred to a new one, again in Azabujuban with more seats now.

Japan has upped their pizza game in the last 10 years like whoa. I wouldn’t touch it before 2010 and now some of the best pizza I’ve had outside of Naples has been in Japan!

Before most of them were concentrated in French cuisine, especially if you dream stars, that's the way to go. However in the past 20 years many Japanese chef went to Italy and studied under famous Italian chefs. Now they speak great Italian and understand the basics of Italian cuisine. In the past pizza and some places(nowadays) used imported products from Italy. The problem of pizza as a chef explained to me was that the soft water of Japan didn't go well with imported italian flour. So they changed it, they start to use only local Japan produced ingredients, once they did this, voila success. Japanese water is soft, the wheat grain is also different from Italian one, climate and so on. So by adopting local products with Italian knowledge they made the best pizza. Sorry but I had to explain this long way. I used to work in food industry and events for Michelin stars and learned many things there.
